Avocado Toast with Poached Egg

Avocado toast has become a cliche because it works. The version worth making uses proper sourdough, ripe avocado seasoned correctly, and a poached egg on top. The detail that makes the difference is getting the bread right.

Avocado Toast with Poached Egg

Ingredients
  

  • 2 thick slices sourdough bread
  • 1 ripe avocado
  • 2 eggs
  • 1 squeeze lemon juice half a lemon
  • 1 pinch chilli flakes
  • sea salt flakes
  • microgreens or pumpkin seeds to finish

Method
 

  1. Toast the sourdough until properly golden and crisp.
  2. Bring a pan of water to a gentle simmer. Add a splash of vinegar. Crack eggs in one at a time and poach for 3 minutes.
  3. Halve the avocado and mash onto the toast with lemon juice and a good pinch of salt.
  4. Place a poached egg on each slice.
  5. Finish with chilli flakes and microgreens or seeds.
