Method
- Toast the sourdough until properly golden and crisp.
- Bring a pan of water to a gentle simmer. Add a splash of vinegar. Crack eggs in one at a time and poach for 3 minutes.
- Halve the avocado and mash onto the toast with lemon juice and a good pinch of salt.
- Place a poached egg on each slice.
- Finish with chilli flakes and microgreens or seeds.
