Egg and Vegetable Scramble with Feta

Ingredients
  

  • 3 eggs
  • 1 tbsp olive oil
  • 1 large handful spinach
  • 1 roasted red pepper sliced, from a jar is fine
  • 50 g feta crumbled
  • fresh parsley or chives
  • salt and black pepper

Method
 

  1. Beat eggs with a pinch of salt and black pepper.
  2. Heat olive oil in a non-stick pan over medium-low heat. Add spinach and cook for 1 minute until wilted.
  3. Add the roasted pepper and stir briefly.
  4. Pour in the eggs. Let them sit for 20 seconds, then gently fold with a spatula, pulling from the edges inward.
  5. When almost set but still slightly wet, remove from heat. Scatter feta and herbs on top and serve immediately.
