Shakshuka is the easiest one-pan breakfast you will make all week. Eggs poached directly in spiced tomato sauce, finished with feta and parsley. One pan, 25 minutes, no special skills required.

Servings: 2 servings

Ingredients
  

  • 2 tbsp olive oil
  • 1 large onion diced
  • 2 red peppers sliced
  • 3 garlic cloves minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 pinch cayenne
  • 400 g tin chopped tomatoes
  • 4 eggs
  • 80 g feta crumbled
  • fresh parsley
  • salt and pepper

Method
 

  1. Heat olive oil in a large frying pan over medium heat. Add onion and peppers and cook for 8 minutes until soft.
  2. Add garlic, cumin, paprika and cayenne. Cook for 1 minute.
  3. Pour in tomatoes, season well, and simmer for 10 minutes until thick.
  4. Make 4 wells in the sauce and crack an egg into each. Cover and cook for 5 to 7 minutes depending on how you like your yolks.
  5. Scatter feta and parsley on top. Serve straight from the pan with bread.
