Shakshuka is the easiest one-pan breakfast you will make all week. Eggs poached directly in spiced tomato sauce, finished with feta and parsley. One pan, 25 minutes, no special skills required.

- Heat olive oil in a large frying pan over medium heat. Add onion and peppers and cook for 8 minutes until soft.
- Add garlic, cumin, paprika and cayenne. Cook for 1 minute.
- Pour in tomatoes, season well, and simmer for 10 minutes until thick.
- Make 4 wells in the sauce and crack an egg into each. Cover and cook for 5 to 7 minutes depending on how you like your yolks.
- Scatter feta and parsley on top. Serve straight from the pan with bread.
